In Italian 'biscotti' means biscuit. More specifically it comes from the words 'bis' and 'cotto', meaning twice-baked. Following the Tuscan tradition, 'wildbite' biscotti are handrolled into logs, baked, then sliced and baked again to develop their signature crisp texture.

We are inspired by the creative environment and the fabulous produce available from the rich and fertile soils of the subtropical northern coast of NSW. A combination of traditional recipes and methods with Australian native ingredients and blends of the Asia-Pacific region gives 'wildbite' biscotti their unique flavours.
